Since Childhood, Chef Jay was taught and encouraged by her mother who taught her the secrets of family recipes that have been passed down from generation to generation. Authentic Northern dishes and methods which have been honed each time she cooks.
Chef Jay is intensely proud of his heritage and has made it his mission to bring these ‘Kaow Soi’ recipes to light, which are slowly dying as each generation passes.
But it is not only local Northern Thai dishes that Jay is passionate about, but she’s also driven to seek out and learn the local dishes from each province which he has worked tirelessly to add to his repertoire.
Chef Jay’s love of cooking is connected to nature, using raw and organic ingredients to create delicious dishes that tell their own story. Experimenting with these ingredients to unleash their own uniqueness.
